Jen's Bunkhouse Chili
Jen's Bunkhouse Chili
Makes 6 to 8 servings (about 8 cups)
2 pounds ground beef
1 medium green bell pepper, chopped
1 medium onion, chopped
1 cup chopped celery
2 cloves garlic, minced
1 can (16 ounces) crushed tomatoes
1 1/2 cups (12 ounces) beer
1 cup Barbecue Sauce
2 - 3 tablespoons chili powder
2 teaspoon dried oregano leaves, crushed
1 teaspoon salt
1/4 teaspoon pepper
1 can (15 to 17 ounces each) light red kidney beans, drained
1 can (15 to 17 ounces each) dark red kidney beans, drained
Shredded Cheddar cheese
Sour cream
In Dutch oven or large saucepot, brown beef. Add green pepper, onion, celery and garlic; saute until tender-crisp. Stir in tomatoes, beer, barbecue sauce, chili powder, oregano, salt and pepper. Cover; simmer 1 hour, stirring occasionally. Add kidney beans; simmer, uncovered, 45 minutes, stirring occasionally. Serve with cheese and sour cream.
