Halloween photos

Well another Halloween came & went. I swear, the number of kids we see come by gets smaller and smaller every year. The number of houses that give out treats seems to be dwindling too, much to the kids' dismay.



We got together with our friends in the cul-de-sac (we're honorary members) - the circle was blocked off and we enjoyed hanging out. It was all pretty low-key, except there was a ton of food! Terry sure knows how to cook a mean burger! Here's what I brought - feeds a crowd and is delicious!


Jen's Mostaccioli


1 16-oz. package Mostaccioli or Penne noodles
2 large cans (32 oz.) Hunt's Spaghetti Sauce (I use the Garlic flavor)
1 to 1-1/2 lb. sweet Italian sausage
2 cups Ricotta cheese
1-1/2 cups shredded Mozzarella cheese
1/2 cup Parmesan cheese


Preheat oven to 350F. Cook pasta according to package directions; meanwhile saute sausage (remove from casing & crumble if necessary). Drain pasta and return to pot; add sauce and stir. Stir in sausage. Spread half of pasta mixture on bottom of 12x17" baking pan. Drop tablespoonfuls of ricotta on top of pasta. Sprinkle Mozzarella on top; sprinkle 1/4 cup Parmesan. Top with remaining pasta mixture; sprinkle with remaining 1/4 cup Parmesan.


Bake loosely covered with aluminum foil for 35-45 minutes. Let stand at room temperature for about 5 minutes before serving.


This dish can be prepared in advance and stored in refrigerator or freezer. If baking while cold, be sure to add 15 or more minutes to baking time.
