Creamy Parmesan Dressing + Marinade for Steak
As a couple in our 40s with kids in their teens, we always seem to be going in different directions. Since Terry's mom came to live in Arizona we've dedicated our Sundays to spending time with her. Not only is it a chance to have some one-on-one with her, but it's a day when we know, no matter what, we will be having a family dinner all together. After a long and busy week for each of us, it's nice to culminate our weekend by sharing a home-cooked meal.
For these weekly meals, I have been taking time to cook food that is a little more special than the usual convenience food we eat throughout the week. So far I've been pretty happy with the results. I have made some wonderful meals like chicken Parmesan, carne asada, and just this past weekend, sliced grilled sirloin steak over Romaine with creamy Parmesan dressing. These are turning out to be enjoyable meals (for the company of family) as well as delicious ones (for the restaurant-quality food without the bill!).
I know I've shared recipes in the past on this blog, but now that I'm more consistently cooking more regularly (a change in work schedule helps too!) I will probably be sharing more. So loosen your belt buckle and get ready for more of my favorites.
Starting with my new favorite dressing. I originally was going to make the steak salad with store-bought Caesar dressing because that's the way I usually see it on a restaurant menu. However, I was flipping through one of my favorite magazines, Real Simple, and found this recipe which turned out wonderfully:
Creamy Parmesan Dressing

1/2 cup Olive oil
1/2 cup Parmesan cheese ; grated
1/4 cup Sour cream
2 tablespoon White wine vinegar
2 tablespoon Water
1/4 teaspoon Kosher Salt
1/4 teaspoon Freshly ground pepper
-= Instructions =-
In small bowl, whisk together all ingredients.Keeps up to 5 days in the refrigerator. Suggestion: Serve mixed with romaine lettuce, top with grilled steak slices and shredded jack cheese.
If you've never made homemade salad dressing before, I encourage you to do so. It's so easy to do, and most of the time you probably already have the ingredients in your pantry and fridge (I did for this one). Who needs store-bought, factory-made dressing with all those additives and preservatives?
Also, I found this wonderful steak marinade at Allrecipes.com - it added a wonderful flavor to the meat and I think it would be great for chicken too.

1/2 cup soy sauce
1/3 cup red wine vinegar
1/4 cup fresh lemon juice
3 tablespoons Worcestershire sauce
1 tablespoon freshly ground black pepper
2 tablespoons Dijon-style prepared mustard
1 onion, sliced
2 cloves garlic ; minced

In a medium bowl, combine the oil, soy sauce, vinegar, lemon juice, Worcestershire sauce, ground black pepper, mustard, onion, and garlic. Mix together well, and use to marinate your favorite meat.
