Buffalo Chicken Pizza
In case you didn't already know this, our family is from Western New York. Growing up just an hour from the birthplace of the Buffalo chicken wing, we indulged in this local delicacy quite often. Nine years ago when we moved to Arizona we quickly started experiencing withdrawal - although a few restaurants came close, nobody got the flavor quite right and they even had the audacity to serve them with ranch dressing instead of bleu cheese!
Fortunately, the authentic Buffalo flavor can be found in a bottle. Frank's Red Hot sauce gives chicken wings the most perfect and authentic flavor IMHO. Check out the recipes on their website for a bunch of great meal and appetizer ideas.
The chicken wing recipe on their site is terrific, but sometimes you want to mix it up a bit, right? I put together a quick and easy meal for my family one night and it was a big hit. Enjoy!
Buffalo Chicken Pizza
Ingredients
1 Pre-made pizza shell (Boboli works great)
1-1 1/2 cups bleu cheese dressing (eyeball it)
2 cups cooked chicken, cut into bite-sized pieces
1/2 cup Frank's Red Hot Buffalo Wings Sauce (SEE NOTE!)
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
2/3 cup crumbled blue cheese, optional
Instructions
Preheat oven to 400°F. Place pizza crust on a cookie sheet or metal pizza pan. Spread dressing over shell (add more or less if desired, or substitute Ranch if you prefer), set aside.
Toss chicken in Buffalo Wing Sauce (add more sauce for more spice, less sauce for less heat). Sprinkle pizza with chicken, then cheeses.
Bake the pizza in 400°F oven for 15-20 minutes or until cheese is melted. Slice and serve - goes great with salad.
NOTE: Frank's Red Hot makes cayenne pepper sauce which is SUPER HOT all by itself. The recipe above calls for their Buffalo Wing Sauce which is pre-made for wings and comes in medium and hot. If you want to scorch your family's innards then go ahead and use the regular cayenne sauce, but you could also adapt by prepping the chicken following the Buffalo chicken wing recipe on the bottle.
