Make your own taco seasoning
Tacos are a big favorite in our family. I remember back in the day when the kids still had kid-size appetites and buying one taco kit was enough for all of us. Now that we have three "big manly appetites" in our house that just won't cut it.
As of late, whenever I wanted taco night not only did I have to purchase 2 lbs. of ground beef, I also had to get hard taco shells, soft taco shells, two packets of taco seasoning, tomatoes, shredded cheese, shredded lettuce and taco sauce. That's a lot of "stuff" for what is supposedly one simple meal.
What was killing me the most was the taco seasoning. One envelope of the generic kind usually costs about a buck, though sometimes it goes on sale 2/$1. It dawned on me that I was paying money for spices that I probably already had in my own cupboard at home. And that packet of seasoning likely contained more salt and preservatives than I wanted to feed my family.
So, on with the search for a seasoning recipe. I found one at Allrecipes.com but modified it to suit my tastes, The result was excellent. The tacos tasted just like Taco Bell. And I was right - I did have all the ingredients on hand. It came out so well that I made a quadruple batch and have it saved in the cupboard for the next couple times I make tacos or taco pie. Taco Seasoning
Ingredients
2 tablespoon Chili powder
1/2 teaspoon Garlic powder
1/2 teaspoon Onion powder
1/4 teaspoon Cayenne pepper
1/2 teaspoon Italian seasoning
1 teaspoon Paprika
1 tablespoon Ground cumin
1 teaspoon Kosher Salt
1 teaspoon Black pepper
Instructions
Combine all ingredients in an air-tight container; store in a cool, dry place. When ready to prepare taco meat, brown ground beef and drain off fat. Add 2 Tablespoon mix per 1 lb. ground beef, with 3/4 cup water. Bring to boil and simmer covered 10 minutes. Serve with toasted or soft taco shells, shredded lettuce, shredded cheese, chopped tomatoes, sour cream and taco sauce.
Note: This recipe makes enough to season about 2 lbs ground beef for tacos.
