Blackberry Apple Crisp
When I saw blackberries in my basket last week I was thrilled. Not something I would usually think to buy, but they were simply the perfect addition to the apple crisp I had planned to make. Of course, you can leave them out, or sub raisins, but if they are in season it's likely to cost less than a dollar to pick them up at your grocer.
Serve with vanilla ice cream and you've got the perfect autumn dessert. Enjoy!
Blackberry Apple Crisp
1/2 pint blackberries
5-7 Granny Smith apples, diced
1 cup brown sugar, divided
1 tsp. cinnamon
1 cup flour
3/4 cup rolled oats
1/2 flaked coconut
1/2 tsp. nutmeg
1/2 cup butter
Vanilla ice cream
Place diced apples and blackberries in a bowl (I halved the blackberries as they were quite large). Add 1/4 cup brown sugar and cinnamon and mix gently. Place in 2-quart baking dish and set aside.
In a small bowl, combine remaining brown sugar, flour, oats, coconut and nutmeg. Cut in butter until crumbly. Place on top of fruit mixture and spread over gently and evenly. Bake at 350F for 45-50 minutes. Serve warm with ice cream on the side.
