Cranberry Pear Gorgonzola Salad

Got a potluck to go to, and someone said "oh just bring a salad"? But you want to impress. You want to showcase your talent with food. A simple romaine with onions and tomatoes will no suffice. What to do? Serve this amazing combination of flavors. It's guaranteed to get you raves from guests. 


Cranberry Pear Gorgonzola Salad

Ingredients

1/3 cup Pineapple juice or orange juice
1/3 cup red wine vinegar
1/3 cup canola oil
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/8 teaspoon freshly cracked pepper
2 tablespoons sugar
1/2 cup chopped walnuts
12 cups torn mixed salad greens
3 medium pears, sliced (sweet pears like Bartlett work best)
1/2 cup dried cranberries 
3/4 cup crumbled blue or Gorgonzola cheese
 

 


Instructions
For dressing, in a bowl, combine pineapple juice, red wine vinegar, oil. mustard, salt, pepper and sugar. Set aside.

In a large salad bowl, combine greens, pears and cranberries. Drizzle with dressing. Add nuts and blue cheese; toss.


Yields: 12 Servings
